Research Interest:

Ms. Saltzman’s research interests focus on the intergenerational transmission of appetite self-regulation in families with young children. By examining factors across multiple levels using a transdisciplinary approach, Ms. Saltzman’s research aims to elucidate interactions between biological, socio-emotional, behavioral, and environmental antecedents of child appetite self-regulation and weight change.

Ms. Saltzman works on transdisciplinary research teams with partners in Nutritional Sciences, Human Development and Family Studies, Kinesiology/Community Health, Psychology, Illinois Extension, and the School of Social Work. Her work uses naturalistic observational coding methods, narrative interviews, and behavioral task batteries over multiple assessments to examine individual, dyadic, and familial contributors to child health. Ms. Saltzman has trained to use structural equation modeling, path analysis, latent variable/class analysis, and regression techniques to collect and analyze data on health behaviors, emotion, and interpersonal interactions. 

MPH Practicum Experience:

During the culminating Capstone project of the MPH, Ms. Saltzman collaborated with a team of researchers, community stakeholders at an alternative school for at-risk adolescents, and a community garden. The purpose of this participatory research project was to examine the feasibility of implementing a holistic health education program for girls aged 13-16 in an alternative school setting.

Ms. Saltzman worked with Carle Foundation Hospital, Community Outreach and Hospital Operations for her MPH Practicum. As a member of the administrative team, Ms. Saltzman was involved in data analysis regarding patient satisfaction and hospital accreditation, and evaluation of a state-wide Emergency Action Plan exercise.
