Research Interest

Ms. Metcalfe investigates the influence that participating in cooking has on the development of children’s food preferences and healthy eating habits. Her research involves experimental work investigating the impact of cooking on preferences, as well as program development and evaluation of culinary interventions with children. Ms. Metcalfe advocates for increased nutrition outreach and culinary education for children and families, and systematic evaluation of these programs to determine their impact on dietary attitudes and behaviors.

MPH Practicum Experience

Under the direction of Dr. Jennifer McCaffrey at the University of Illinois Office of Extension and Outreach, Ms. Metcalfe implemented and evaluated a series of cooking camps throughout Illinois for children aged 8-13. Her project involved teaching cooking classes to campers and leading focus groups to assess the appeal of the program and its impact on skills, attitudes and self-efficacy towards cooking. Ms. Metcalfe now serves as the Research Coordinator for the Illinois Junior Chefs program and continues to lead program evaluations on a regular basis.
